1. Grind masoor dal with ginger and green chili into a smooth batter using minimal water.
2. Add oats powder to this batter. Let it rest for 10 mins to thicken slightly.
3. Mix in all the veggies – broccoli, carrots, capsicum, onions, coriander, jeera, turmeric, red chili, Amchur powder, salt, and lemon juice.
4. Adjust the consistency so the batter is thick but pourable (like idli batter).
5. Heat an appe pan, grease lightly, and pour batter into each cavity.
6. Cover and cook on low flame for 5–7 minutes on each side until golden and cooked through.
7. Serve hot with green chutney or a tangy yogurt dip!
