Instructions:

1. Soak the Millet: Rinse the bhagar (barnyard millet) in water to remove any impurities. Soak it in water for about 10 to 15 minutes.
2. Blend the Mixture: After soaking, drain the water and transfer the bhagar to a blender. Add the curd and blend until you get a smooth consistency.
3. Prepare the Batter: Transfer the blended mixture to a bowl. Add the Rajgira flour and mix well. Gradually add water to achieve a thick, pourable batter consistency.
4. Season the Batter: Add salt, red chili powder, and jeera powder (optional) into the batter. Mix well.
5. Add Leavening Agent: Just before steaming, add Eno or baking soda to the batter and mix gently but thoroughly.
6. Steam the Idlis: Grease the idli molds and pour the batter into them. Steam the idlis for about 15 minutes or until a toothpick inserted into the idlis comes out clean.
7. Serve: Once done, remove the idlis from the molds and serve hot with upvas chutney.
