Sweet Potato & Spinach Tikki with Mint Yogurt Dip

Instructions:

Tikki:
1. In a mixing bowl, combine mashes sweet potatoes, sautéed spinach, green chili, onion, ginger-garlic paste, cumin powder, coriander powder, garam masala, red chili powder, and salt.
2. Add the flour and mix well to form a dough-like consistency.
3. Shape the mixture into small tikkis (patties).
4. Heat olive oil in a non-stick skillet over medium heat.
5. Shallow fry the tikkis until golden brown on both sides, about 3-4 minutes per side.
6. Remove from heat and drain on a paper towel.

Mint Yogurt Dip:
1. In a bowl, mix Greek yogurt, chopped mint leaves, lemon juice, minced garlic, and salt and pepper.
2. Stir well to combine.
3. Chill in the refrigerator for 15 minutes before serving.
