Instructions:

1. Mix Dry Ingredients: In a large bowl, whisk together whole wheat flour, baking powder, and salt.
2. Combine Wet Ingredients: In another bowl, whisk together milk, egg, melted coconut oil, and vanilla extract.
3. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over-mix.
4. Add Strawberries: Gently fold in the chopped strawberries.
5. Cook Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of coconut oil. Spoon 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
6. Serve: Serve warm, optionally topped with fresh strawberries and a dollop of Greek yogurt for extra protein.
