Instructions:

1. Heat olive oil in a pot and sauté onion, tomato and garlic until fragrant.
2. Add drumstick pieces, sauté for 2-3 minutes.
3. Pour in vegetable stock and bring to a boil.
4. Reduce heat, cover, and let simmer for 20-25 minutes until drumsticks are tender. Season with salt, pepper, and lemon juice.
5. Blend if desired for a smoother consistency.
6. Add a tempering of ghee and cumin seeds on top of the soup.
7. Garnish with fresh coriander before serving.
