Chicken Sweet Potato Cutlets (1)

Instructions:

* Prepare the base – In a mixing bowl, add shredded chicken and mashed sweet potato. Mix well.
* Add veggies & spices – Stir in the onion, chilies, ginger-garlic paste, carrots, capsicum, spinach, and spices (red chili powder, chicken masala, turmeric, cumin, and salt).
* Bind the mixture – Add bread crumbs (or oats) and a little beaten egg if needed. Mix until everything comes together like a dough.
* Shape the cutlets – Take small portions and shape into round or oval cutlets.
* Cook –Preheat the air fryer to 180°C (350°F). Lightly brush or spray the cutlets with oil and air fry for 10–12 minutes, flipping halfway, until golden brown and crisp. ( Or Heat a nonstick pan, drizzle a little oil, and shallow fry each cutlet on medium heat until golden brown and crisp on both sides.)
* Enjoy hot with mint chutney or curd dip!
