* Prep the Mix:
In a large bowl, combine cooked quinoa, paneer, all the chopped and grated veggies, mashed potato, flour, onion, ginger, and spices. Add lemon juice and 1 tsp ghee. Mix until everything holds together. If the mix feels too wet, add more besan or oats. If dry, a splash of curd helps.
* Shape the Patties:
With lightly greased hands, shape the mixture into small round or oval patties.
* Cook to Perfection:
Heat a non-stick pan or iron tawa on medium heat. Brush with ghee. Place patties and cook for 3–4 minutes on each side, until golden brown and slightly crisp.
* Serve:
Serve hot with green chutney, mint yogurt dip, or sandwich them into whole grain buns for healthy burgers. Also great for tiffins and post-workout snacks!
