Tomato Chicken Pasta

Instructions:

1. Cook Pasta: Boil the pasta in salted water as per package instructions until al dente. Drain and set aside.

2. Prepare Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat, add chicken, and cook for 6-7 minutes on each side or until fully cooked. Remove and set aside.

3. Make Sauce: In the same pan, add onion and garlic, sauté until softened. Stir in tomato paste. Add Italian herbs, simmer for 15 minutes.

4. Combine: Add cooked pasta and boiled spinach to the sauce, stir until spinach wilts. Slice the chicken and place on top. Sprinkle with parmesan cheese if using.

5. Serve: Garnish with fresh basil leaves.
