1. Boil the Noodles: Boil whole wheat noodles according to package instructions. Drain and pat dry.
2. Air-Fry the Noodles: Preheat your air fryer to 180°C (356°F). Lightly coat the boiled noodles with a small amount of olive or sunflower oil. Place in the air fryer basket and air fry for 5-7 minutes, shaking halfway through until they are crispy.
3. Prepare Veggies: In a pan, heat 1 tbsp oil over medium heat. Add ginger and garlic, and White spring onion sautéing until aromatic.
4. Stir-Fry Veggies: Add onion, tomato, carrot, zucchini, Cabbage and capsicum to the pan. Stir-fry for 4-5 minutes until vegetables are tender but still crisp.
5. Combine Everything: Add soy sauce, chili sauce, Chili flakes, Mixed herbs , tomato ketchup & Sesame seeds to the vegetables. Stir well. Add the air-fried noodles and gently toss everything together to ensure the noodles are well-coated with the sauce.
6. Season and Serve: Add salt and black pepper to taste. Garnish with fresh coriander leaves. Serve hot.
